6 oz Portabello Mushroom, stem & gills removed, sliced thin
1/2 Red Bell Pepper, sliced thin
1/2 Yellow Bell Pepper, sliced thin
1/2 Green Bell Pepper, sliced thin
2 Jalapeno Peppers, chopped
1 cup Onions,sliced
2 Celery Heart Stalks, sliced thin on a diagonal
2 tbsp Olive Oil
1 tbsp Smoked Paprika
2 tbsp Low Sodium Taco Seasoning Mix
2 oz Tap water
This can be made hotter or milder to suit individual tastes by omitting or increasing the amounts of jalapenos and spices.
Heat oil on medium in a wok.
Add onions, bell peppers, celery and jalapeno and saute for 5 minutes.
Add mushrooms and saute an additional 5 minutes.
Add the spices and water.
Reduce heat to med low and simmer until water is gone, 5-7 minutes.
Serve with warmed tortillas and salsa of your choice.
