Billy's Eggplant Parmesan

Introduction

My son makes this for my grandson without the cheeses (lactose intolerant). I don't miss the bread crumb coating usually found in 'Parms'. You can adjust the portion size for an entree serving. Ingredients

    2 fresh Eggplant, approx. 1-1/4 lb each.
    2 Tbsp. EVOO
    1 cup shredded Mozzarella Cheese
    1/2 cup grated Parmesan Cheese
    1-1/4 cups Spaghetti Sauce

Directions

Cut the eggplant into 1/4 inch round slices.
Heat the oil in a large saute pan over medium heat until shimmering.
Saute the eggplant rounds on both sides until lightly golden.
Place on layered paper towels to absorb any excess oil.
Heat oven to 400-F.
In the bottom of a 9X9 square pan, place 1/4 cup of sauce.
Place a layer of Eggplant, sprinkle with Mozzarella, then Parmesan.
Spread 1/4 cup of sauce over top and repeat, until all the eggplant is used, finishing with a layer of sauce, Mozzarella and Parmesan.
Bake on the middle rack of the oven, 15-20 minutes, uncovered, until bubbley, and cheese has melted.
