Introduction

This is basically a random blueberry muffin recipe I made up. I wanted a lower cal muffin so I used about half as much sugar and added splenda to make up the difference. They turned out quite good, a great lower calorie option when you have a muffin craving! This is basically a random blueberry muffin recipe I made up. Ingredients



    Ingredients:
    *King Arthur Flour Unbleached White Whole Wheat Flour, 1 cup
    *Splenda, 5 tsp
    *Granulated Sugar, .5 cup
    *Flax Seed Meal , 1 tbsp
    *Quaker One Minute Oatmeal, 0.5 cup
    *Baking soda 1/4 tsp
    *Baking Powder 14 tsp
    *Salt 1/4 tsp
    *Vanilla 1/4 tsp
    Milk, nonfat, .5 cup
    *YOGURT - Yoplait Greek honey vanilla, .75 serving
    *Egg, fresh, 1 large
    *Crisco Pure Vegetable Oil, 2 tbsp
    *Blueberries, fresh, .75 cup

Directions

Mix dry ingredients together in large mixing bowl.
Mix Egg, yogurt, milk, vanilla, and oil in seperate bowl.
Combine.
Fold in blueberries
Divide into 12 muffins
Bake at 375 for 15-20 minutes or until toothpick come out clean.
