Tofu Shirataki Shrimp Lo Mein

Tofu Shirataki Shrimp Lo Mein

Introduction

A healthier version of a favorite! A healthier version of a favorite!
Number of Servings: 1

Ingredients

    Tofu Shirataki- 8oz
    Frozen Cooked Shrimp- 3oz
Bird's Eye Seven Veggie Stir Fry- 2 cups
Kikkoman Lite Soy Sauce- 2 tbsp

Directions

1. Coat a frying pan with non-stick cooking spray.
2. Add veggies and shrimp, cooking until heated through.
3. While that's cooking, open the tofu shirataki and drain out the liquid.
4. Place the tofu shirataki in a colander and rinse VERY WELL under running water (I rinse mine for a good 5 minutes to remove that lime juice!). While rinsing, use kitchen shears to cut the shirataki into more manageable pieces.
5. Add tofu shirataki and soy sauce to the frying pan. Heat for only a couple of minutes until shirataki is warm and the mixture is nicely coated with the soy sauce.

Note that the tofu shirataki does not need long to cook, so don't overdo it!

  • This is so easy, so delicious and definitely a menu make again soon. The recipe is more than a generous portion and filling! I have to watch my sodium intake, so I did cut back to 1 Tbsp of lite soy sauce, but added some garlic and ginger. - 3/5/12
