Shrimp Spring Rolls

Introduction

yummy spring rolls with little fat! yummy spring rolls with little fat!
Number of Servings: 4

Ingredients

    1tsp canola oil
    1 clove garlic
    1 tsp ginger peeled minced
    1.5 cup cabbage shredded
    1 green onion whites and green
    1 yellow bell pepper
    1 tbsp lite soy sauce
    2 oz rice stick noodles
    grated carrot
    2 tbsp chopped cilantro
    2 tsp dark sesame oil
    12 6inch round rice paper wrappers

Tips

they get sticky so put on wax paper and don't have them touch.


Directions

heat large skillet over med heat, add canola and add garlic and ginger heat until fragrant, stir in cabbage onion and soy sauce. increase heat to medium high until veggies are tender ~15 min. transfer to bowl. Meanwhile place rice noodles in bowl and cover with HOT water to cover. Leave until done, approx 10 minutes. Add to cabbage mix.
Dip the rice paper wrappers in hot water, lay on clean towel and put in cabbage mix, fold the sides and roll up. Repeat until done.

Serving Size: makes 12 spring rolls
