Italian Sausage Pasta Skillet

    1 pound italian sausage
    1 green pepper, chopped
    1 small onion, cut into thin wedges
    2 jars spaghetti sauce
    2 cups mostaccioli or penne, cooked and drained
    8 oz part-skim mozzarella cheese, shredded, divided


Brown sausage in large skillet. Add green pepper, and onion; cook 5 minutes or until sausage is cooked through and vegetables are tender.

Add spaghetti sauce and pasta; cook until heated through.

Stir in 1 cup of the cheese Sprinkle with remaining 1 cup cheese; cover. Let stand 2 min. or until cheese is melted.

substitute with turkey sausage and 2% mozzarella cheese to reduce fat. Use whole grain pasta to increase fiber.

  • I used sliced tomatoes that I cooked down with the peppers and onions. I used Italian spices to flavor it and 1/2 c. low sodium chicken broth. Overall, very yummy. - 4/29/12

  • One cup = 8 oz. so how can you "Stir in 1 cup of the cheese Sprinkle with remaining 1 cup cheese" if the recipe only calls for one cup of cheese total? Think you meant 16 oz. of cheese? - 7/30/11

  • made this last night as a way to use up some leftovers, tho did change it up a little as no onions or peppers, added an ear of corn and used tricolor pasta wheels instead as well. Pretty good, even approved of by a picky 13yo - 7/8/11

  • Excellent and easy to make. Almost could be a meal by itself. I cut up my sausages instead of whole ones and mixed that in for even pieces throughout. The whole family loved it and will keeps this recipe around for lots of future use. - 2/22/10

  • This was a very tasty and easy to make meal. We did some substitutions such as the pasta type and instead of ground italian sausage we used leftover grilled links that we cut up into rounds to make use of what we had in the fridge/cabinets. It made a great meal with plenty of leftovers for lunch. - 4/14/09
