Italian Sausage Pasta Skillet

Ingredients

    1 pound italian sausage
    1 green pepper, chopped
    1 small onion, cut into thin wedges
    2 jars spaghetti sauce
    2 cups mostaccioli or penne, cooked and drained
    8 oz part-skim mozzarella cheese, shredded, divided

Directions

Brown sausage in large skillet. Add green pepper, and onion; cook 5 minutes or until sausage is cooked through and vegetables are tender.

Add spaghetti sauce and pasta; cook until heated through.

Stir in 1 cup of the cheese Sprinkle with remaining 1 cup cheese; cover. Let stand 2 min. or until cheese is melted.

substitute with turkey sausage and 2% mozzarella cheese to reduce fat. Use whole grain pasta to increase fiber.

  • One cup = 8 oz. so how can you "Stir in 1 cup of the cheese Sprinkle with remaining 1 cup cheese" if the recipe only calls for one cup of cheese total? Think you meant 16 oz. of cheese? - 7/30/11

  • This was a very tasty and easy to make meal. We did some substitutions such as the pasta type and instead of ground italian sausage we used leftover grilled links that we cut up into rounds to make use of what we had in the fridge/cabinets. It made a great meal with plenty of leftovers for lunch. - 4/14/09
