Lisa's Mushroom Chicken casserole

Ingredients

    1 can 98% Fat Free Cream of Mushroom Soup
    4 Boneless, Skinless Chicken Breast, All Natural
    1 cup Brown Rice, long grain
    1 cup Water
    1/4 cup shredded cheese (what ever variety you like)

Tips

To reduce the calories & fat a little, use fat free cheese or none at all. I added the cheese for flavor


Directions

1. in a 8X8 baking dish, dump soup & spread out. Add water & mix with soup till there are no more chunks of soup.
2. Add rice & mix well
3. Add chicken & cover with soup mixture
4. sprinkle 1/2 the cheese over chicken
5. Cover w/ aluminum foil & bake. If using an oven, bake at pre heated 350 degrees. I put mine on the grill (b/c I cook EVERYTHING on the grill) that I preheated to high, turned off the center burner (where the dish was placed) & put the other burners on medium.
6. bake for 30 minutes covered.
7. remove aluminum foil & bake for antoher 10 minutes to evaporate any excess water
8. remove from grill, serve with some yummy asparagus & enjoy!

Serving Size: 1 serving = 1 breast of chicken with spoonful of rice (about 3 ounces)
