Zucchini Bread

Ingredients

Milk, nonfat, 1 cup
Egg, fresh, 3 large
Granulated Sugar, .75 cup
Brown Sugar, .75 cup, unpacked
Applesauce, unsweetened, .75 cup
Vanilla Extract, 1 tbsp
Zucchini, 4 cup, grated
*Flour, white, 2 cup
Flour, whole grain, 2 cup
Baking Powder, 2 tsp
Baking Soda, 1 tsp
Cinnamon, ground, 2 tbsp
Nutmeg, ground, 2 tsp
Preheat oven to 350 degrees. Spray 9-by-5 inch loaf pan with cooking spray.
Combine milk, eggs, sugar, applesauce, vanilla, cinnamon & nutmeg in a large bowl. Mix in grated zucchini. Add mixture of flour, baking soda and baking powder to the wet mixture and combine (batter should be thick and not soupy or watery, if it is, add more flour). Pour batter into loaf pans and bake for 45 minutes or until knife comes out of the center clean. Cool for 30 minutes and serve.
