Banana Cream Pudding

Ingredients

    2 Tbs granulated sugar
    1 Tbs plus 2 tsp all-purpose flour
    pinch of salt
    Yolk of one large egg
    1/2 cup milk
    1/8 tsp vanilla extract
    1 small banana
    1 Tbs semi-sweet chocolate chips, chopped fine (optional)

Directions

Place the sugar, flour and salt in a small saucepan or microwavable bowl and whisk to blend well. Cook over medium heat whisking constantly, until the custard thickens and just begins to boil, 3-5 minutes, until the custard thickens. Remove from heat and stir in vanilla. Put a little in a two custard cups, slice bananas between the two cups and top with the rest of the customer. Top with chopped chocolate chips and refrigerate for one to two hours before serving.
