Introduction

These cookies are soft and fluffy. If you like chocolate this recipe is a great treat. Any kind of mix-ins work great with this recipe, like peanut butter chips or walnuts. I chose to keep it simple. Number of Servings: 30

Ingredients

    2 cups flour
    32 tsp or 2/3 cup unsweetened cocoa powder
    1 tsp bakingsoda
    1/4 tsp salt
    1 cup butter
    1/2 cup granulated sugar
    1/2 Splenda
    32 tsp or 2/3 Light brown sugar
    2 eggs
    2 tsp pure vanilla extract
    1 fl oz.coffee

Variations
chocolate peanut butter chip add 10 oz peanut butter chips and 1 cup peanuts
Double chocolate chunky mint cookies add chocolate chips and 1tsp pure peppermint in place of vanilla and coffee
chocolate white chocolate chip mint cookies 1tsp peppermint extract in place of vanilla and coffee and 12 oz white chocolate.


Directions

Preheat oven 350 f. Mix flour, cocoa powder, bakingsoda, and salt in large bowl, set aside. Beat butter and sugar in largebowl with electric mixer on med. speed until light and fluffy. Add eggs vanilla; mix well. Fold in dry ingredients little by little. Try not to break up the fluffy butter sugar mixture. At this point you add the coffee, be sure that it is fresh and cooled down. Also, any mix-ins like nuts can be added at this point. The raw cookie batter will look like dark chocolate mousse.
Drop by rounded spoonful, 2 inches apart onto baking sheet sprayed with non-stick cooking spray.
Bakes 8-10 min or until cookis are set. Remove from oven to wire racks to cool completely.
