IntroductionA variation of Jamaican style rice and peas. A variation of Jamaican style rice and peas.
1 cup quinoa
1 cup pigeon peas
1.5 tbsp coconut milk
3 cloves of garlic
1 tbsp of butter
2.5 cups water
1 scotch bonnet pepper
1 tsp Thyme
2. Once cooked add water, coconut milk, garlic, scallion butter, salt and thyme and simmer 10 minutes.
3. Rinse quinoa then stir into with pepper and bring to a boil.
4. Lower flame and allow quinoa to steam.
Serving Size: 1/4 cup
