This is a one pot recipe I came up with that is full of nutrients,quick to make, filling and inexpensive. Vegetables of your choice may be substituted. Ingredients

nutritional yeast
sun dried tomatoes
olive oil
cauliflower
zuchinni
yellow or red peppers
carrots
celery
ginger root
portabella mushrooms
canned tomatoes
extra firm tofu
fat free refried beans
jalapeno pepper
basil
salt
pepper
garlic powder
Tips
Spices can be adjusted to your taste. I like mine spicier and usually add red pepper flakes and curry powder.
Directions
Cut all vegetables including ginger in medium size pieces and saute in olive oil for 5 minutes.
Add refried beans, canned tomatoes, nutritional yeast and stir well. Add broth or water if too thick.
Cook until carrots are tender crisp.
Add cubed tofu, basil leaves, garlic powder, salt, pepper. Stir carefully and cook for another 5 - 10 minutes. Taste and correct seasonings.
Eat and enjoy.
Serving Size: makes 6 2 cup portions
