sun dried tomatoes
yellow or red peppers
extra firm tofu
fat free refried beans
Spices can be adjusted to your taste. I like mine spicier and usually add red pepper flakes and curry powder.
Add refried beans, canned tomatoes, nutritional yeast and stir well. Add broth or water if too thick.
Cook until carrots are tender crisp.
Add cubed tofu, basil leaves, garlic powder, salt, pepper. Stir carefully and cook for another 5 - 10 minutes. Taste and correct seasonings.
Eat and enjoy.
Serving Size: makes 6 2 cup portions
