Ingredients

1/4 cup Quinoa
3 medium summer squash sliced
1/3 cup egg whites
1/4 cup bread crumbs
1/4 cup shredded parmesan
1 tsp. Smart Balance light w/olive oil
Tips
Add herbs and seasonings to taste.
Directions
Cook 1/4 cup Quinoa in 1 cup of water. Slice summer squash. when Quinoa is cooked, mix together with egg whites, butter substitute, and summer squash, top with bread crumbs and Parmesan.
