(Chicken) Sausage, Peppers, and Onions

Introduction

Number of Servings: 4

Ingredients

    - 1 5-count package Casual Gourmet Chicken Sausage Roasted Red Pepper & Spinach
    - 1 medium onion (sliced)
    - 1 Green Bell Pepper (sliced)
    - 1 Red Bell Pepper (sliced)
    - 5 Garlic cloves (diced or crushed)
    - 1 tbsp ground oregano
    - 1 tbsp ground basil
    - dash of salt
    - dash of pepper
    - 1/4 c Rice Vinegar (or 1/4 c white wine, if you have any sitting around!)
    - 1 tbps Extra Virgin Olive Oil

Tips

Works great over rice!


Directions

Pour the 1 tbsp of olive oil into a pan (preferably one with a lid) and turn the stove onto a medium setting. Pre-cook the sausages on all sides until browned on each side. Remove from pan.

Add the onions and peppers, and saute for ten(ish) minutes.

Meanwhile, slice the sausage links into bite-size pieces, but do not add yet!

Add the garlic, and saute until onions and peppers are soft. Add the oregano, basil, salt, pepper, rice vinegar, and sausage. Stir, then cover with lid. Turn stove down to medium-low, and allow to cook until sausage is cooked thoroughly.

Serving Size: Serves four
