3 medium beets, peeled and chopped
1 medium carrot, sliced
2 medium onions, chopped
1/4 of medium head of cabbage, chopped
3 cups sliced, dry shiitake mushrooms
2 TBS. ghee
2 cloves minced garlic
1/2 tsp. black pepper
1/2 tsp. cayenne pepper
2 tsp. beef base
2 tsp. dried dill
2 tsp. oregano
1 TBS. lemon juice
1- 14.5 can diced tomatoes, no salt
fill with just enough water to cover veggies.
Cook for 15-20 minutes.
Add the remaining ingredients, and stir well. Cook 30-40 more minutes.
Serving Size: Makes about 12 two cup servings.
