1/2 cup canola oil
3 Tblespoons cider vinegar
1 teas. garlic powder
1 teas. sugar
1/2 teaspoon cayenne pepper
2 lbs boneless , skinless chicken thighs (approximately 20 thighs)
1/4 cup honey
1/2 cup favorite hot pepper sauce or buffalo wing sauce
1 large clove garlic minced
reduced-fat blue cheese dressing or ranch dressing, celery and carrot sticks for serving, optional
In a plastic sealable bag combine all the marinade ingredients, set aside
cut the chicken thighs in half lengthwise or in thirds if they are really large.
place the thighs in marinade and marinat in the refridgerator at least 1 hour or up to 3 hours.
To prepare the sauce in a large bowl combine honey, hot red pepper sauce and garlic
Preheat the grill or broiler. Remove the thigh pieces from the marinade and discard the marinade.
position the pieces curled so they resemble the flat piece of the wing (tongs work well to shape them) on the grill or on a broiler pan
cook the chicken until its done about 12-15 minutes. remove the chicken from the grill or broiler and toss the pieces in the sauce.
Return the sauce -coated thighs to the grill or broiler for 2 to 3 minutes to set the sauce.
but probably only feed 15 or 20 people
