this is so not authentic but its yummy. This is about 12 servings, again I have a family of 5 and like to have left overs for lunch the next day. most of my recipes will be like this. this is so not authentic but its yummy. This is about 12 servings, again I have a family of 5 and like to have left overs for lunch the next day. most of my recipes will be like this.

Ingredients

    2 tbs olive oil
    1 sweet onion, chopped
    2 boneless skinless chicken breast
    1 can (14 1/2 oz) diced tomatoes with basil, garlic and oregano.
    1 can (14 1/2oz) diced tomatoes with zesty green chilis
    14 oz whole grain brown rice(quick cooking)
    2 cans water

Directions

put oil in dutch oven over medium heat. add chopped onion and saute until translucent. Add cubed chicken and cook until cooked through. add both cans of tomatoes, rice and water stir well. Turn to high and bring to a boil. then turn down to med-low and simmer for 20 mins.
