Cherry Pie

Introduction

Because we cannot often get tart cherries, in order to make a cherry pie I rely on E.D. Smith's Light and Fruity canned cherry pie filling. I watch for it on sale to have it on hand. Ingredients

    3/4 cup crisco
    1/2 tsp salt
    1/2 cup ice water
    about 2 cups of flour

    2 tins of E.D. Smith Light and Fruity Cherry Pie Filling
    1 tsp almond extract

Tips

This is the easiest no fail pie crust ever.


Directions

Preheat oven to 400 degrees.Place crisco, water and salt in a food processor. Add enough flour so that it comes together in a ball. Roll out bottom crust on lightly floured paper. Place in pie pan and put in freezer for about 10 minutes. Roll out top and cut for criss cross pattern.
Mix almond extract with pie filling.
Place filling in cooled pie crust. Top with criss cross pattern. Brush with milk and sprinkle with sugar.
Bake at 400 degrees until edges start to brown- about 25 minutes. Take a square piece of foil with the center cut out, so you are protecting the outer crust and showing the criss cross part. Continue baking until top is golden brown and filling bubbles up a bit. Cool and serve with vanilla ice cream if desired. (Not included in nutritional count).
