Less Guilt Oatmeal Chocolate Chip Cookies

Ingredients

    3 cups Old Wessex Irish Style Oatmeal (dry)
    1 cup Whole Grain Wheat Flour (milled white)
    1/4 tsp. Nutmeg, ground
    1/2 tsp. Cinnamon, ground
    1/8 tsp. Cloves, ground
    1/2 tsp. baking soda
    1/4 tsp. salt
    1 cup Organic Clover Honey
    3/4 cup softened Earth Balance Natural Buttery Spread
    1/2 tsp. Vanilla
    1 rbst free extra large egg
    1/2 cup chopped Pecans (optional)
    1/2 cup fresh Blueberries (optional)
    1/2 cup Sunspire Grain Sweetened Chocolate Chips (optional)

Directions

This recipe is adapted from the Old Wessex Ltd. Irish Oatmeal Box.
Makes approximately 36 medium cookies.
Preheat oven to 375 degree F oven.
Prepare a cookie sheet for nonstick cooking.
Combine dry ingredients in large bowl and mix well.
Mix honey, buttery spread, and vanilla until smooth.
Add egg and beat until smooth and fluffy.
Add wet mixture to dry and mix thoroughly.
Stir in optional ingredients and or choose your own optional ingredient.
Place rounded spoonfuls of dough onto prepared cookie sheet.
Bake approximately 10 minutes until golden brown.
Let set on cookie sheet at least 5 min. and remove to cooling rack.
Best if stored in cookie jar.
Cookies freeze well for large batches. Just remove from freezer 1 hour prior to need.
