Potatoe Pancakes

Ingredients

    4 small potatoes, shredded
    about 2 tbs flour
    3 large eggs
    dash of salt

Directions

mix ingredients well. heat 2 tbsp oil in frying pan on medium-high. put about 1.5 tbsp mix in pan and spread it thin so it makes a circle about 3 to 4 inches diameter. cook about 3-5 minutes or until dark brown then flip it and brown the other side. yields 8-12 pancakes.
