3 egg whites, beaten
2 medium bananas, mashed
1/2 cup low fat soy milk
1/2 cup water
1/4 cup crude bran (Miller's Bran)
1/2 cup whole wheat flour
1/2 cup soy flour
1 TBS baking powder
1 tsp ground cinnamon
Pre-heat a non-stick pan or griddle and spray with cooking oil. Pour about 1/3 cup batter for each fritter and cook until lightly browned on both sides. Respray with cooking oil when adding more batter.
Can be made ahead and kept in refrigerator or freezer and then reheated in a microwave.
Makes 8 fritters.
