Ingredients

    Great Value Lentils, 3.25 cup
    Water, tap, 10 cup
    Onions, raw, 1 medium (2-1/2" dia)
    Carrots, raw, 2 small (5-1/2" long)
    Celery, raw, 2 stalk, medium (7-1/2" - 8" long)
    Garlic, 2 clove
    Parsley, dried, 3 tbsp
    Oregano, ground, .5 tsp
    *Lite Salt - Morton, 0.5 tsp
    *Black Pepper (Ground), 0.25 tsp
    Star Red Wine Vinegar, 2 tbsp
    safeway diced tomatoes no salt added, 3.5 cup
    Great Value Cut Leaf Spinach, 2 cup

Directions

Rinse lentils and put in soup pot along with water, chopped onion, chopped carrot and chopped celery. Add garlic, parsley, oregano, salt and pepper. Bring to boil, reduce heat and simmer covered for 1 hour. Add tomatoes, red wine vinegar and spinach. Cook for 30 minutes more.
