Chicken Chili

Number of Servings: 4

Ingredients

    1 can of corn
    1 box of low fat/low sodium broth
    1 package chicken gravy mix
    4 portions of boneless/skinless chicken breast
    cilantro
    garlic
    onion
    2 cans diced green chiles
    1 jalapeño pepper
    Olive oil

Directions

Dice chicken and sauté with chopped garlic, onion, and jalapeño. (Remove seeds from jalapeño unless you like that extra kick!)
Add chicken broth and allow to boil. Add drained corn, cilantro, and diced chiles. Allow to boil.
Serve with fat free sour cream, diced tomatoes and fresh cilantro for garnish. Also good with warmed corn tortillas or baked tortilla chips.
