Stuffed Patti Pan Squash

Ingredients

    chicken 4 oz grilled or boiled
    2 patti pan squash
    2 egg whites
    10 cherry tomatos
    1 sm green bell pepper
    1 sm red bell pepper
    1/4 teas salt
    1/2 teas pepper
    1 stick low fat string cheese (weight watchers)
    1/2 slice whole wheat bread toasted

Directions

drop squash into boiling water
reduce heat cover cook 15 min
place squash flat side down, remove pulp leaving 1/4 in shell
chop pulp
combine all ingrediants including pulp (except cheese)
place in shallow baking dish, cover bottom with water
stuff squash with ingrediants
sprinkle with toast crumbs
bake for 25 min at 350
remove and lay sliced cheese on top bake again until cheese melts
