Scarborough Fair Pizza Sauce

Introduction

A tasty thick sauce with lots of herbs! A tasty thick sauce with lots of herbs!
Number of Servings: 40

Ingredients

    1 - 6 oz. can tomato paste
    2 - 8 oz. cans tomato sauce
    1 - 29 oz. can tomato puree
    1 tablespoon yellow prepared mustard
    4 cloves garlic minced
    4 teaspoons sugar
    1 to 2 teaspoons pepper
    1/4 to 1/2 teaspoon cayenne pepper (optional)
    1 tablespoon salt
    2 teaspoons dried parsley
    1 teaspoon rubbed sage
    1 teaspoon rosemary
    2 teaspoons thyme
    2 teaspoons basil
    2 teaspoons oregano
    1 teaspoon marjoram
    4 teaspoons fennel
    2 bay leaves



Directions

1. Put the tomato paste in a large saucepan. Gradually stir in the tomato sauce. Then add the puree and all the rest of the ingredients.
2. Put the saucepan on the stove on "medium-high." Stir constantly until boiling. Cover (the sauce is very thick and will splatter out of the pan while boiling unless covered), turn down heat and simmer for 20-30 minutes. Remove bay leaves. Makes about 5 cups. I use 1 cup sauce per 12 inch pizza. I cut the pizza into 8th's so serving size is 2 tablespoons of sauce per 1/8 pizza.
NOTE: Leftover sauce freezes well.
