1 Large Pita (6 1/2" diameter)
1 cup chopped romaine lettuce
1 cup baby spinach
1/4 cup chopped tomato
5 slices cucumber
1 tbsp red onion
2 tbsp chopped celery
3 oz cooked chicken - warm
1/8 cup shredded low fat cheddar
1 tbsp Hidden Valley Light Ranch
2. Put all veggies, chicken, and cheese into the pocket, pour ranch over the top.
3. Create a roll, almost like a burrito, by tucking the top 1/2 of the pita under the veggies and pushing them to the back of the pocket tightly, then roll up over the bottom 1/2 of the pita.
4. Cut pita roll in half, enjoy!
