Mackerel kind-of kedgeree

Ingredients

    Smoked Mackerel, 124 gram(s)
    Brown rice, short grain - raw, .5 cup
    Bulgur, dry, .25 cup
    Peas, frozen, 0.25 cup
    Portabella Mushrooms, 100 grams
    Peppers, sweet, red, raw, sliced, .5 cup
    Cabbage, red, fresh, 1 cup, chopped
    Yogurt, plain, whole milk, .25 cup (8 fl oz)
    Curry powder 1 tbsp
    oil 1 tsp

Directions

Heat the oven to 190 to warm the mackerel through
Put the rice cooker/saucepan on a meidum high heat and add oil to heat through.
Chop the cabbage, mushrooms and peppers. Fry the mushrooms in the pan until their juices release.
Put the curry powder, rice and bulgur in the rice cooker/pan with twice as much water by volume. Put on to cook.

Mix the cabbage with the yogurt, adding a little mustard to taste.
Heat the mackerel through.
When the rice is nearly cooked, stir in the peas and layer the mushrooms on top.
When it's all cooked, serve topped with pepper strips, and the mackerel on top and put the cabbage on the side.

Serving Size: serves 2
