Lemon Blueberry Oatmeal Bars

Ingredients

    Ingredients:
    Coconut, sweetened, 7 oz
    Brown Sugar, .5 cup, unpacked
    Oats, 1 cup
    Wheat flour, white, all-purpose, unenriched, 1 cup
    Butter, salted, .75 cup
    Baking Powder, 1 tsp
    Salt, .25 tsp
    Blueberries, fresh, 1 cup
    Lemon Juice, .5 cup
    1 can sweetened condensed milk (14 oz)

Tips

The recipe called for two 13x4 springform tart pans, but also said a 8x8 pan or a 13x9 pan was alright.


Directions

Preheat the oven to 350 degrees. Prepare the oatmeal crumble in a large bowl: coconut, brown sugar, oats, flour, baking powder, salt and melted butter. Stir well and set aside. In a medium bowl, combine the lemon juice and sweetened condensed milk, set this aside. Spray your pan with non-stick spray, and pack the pan 1/3 full with oatmeal crumble mixture. Once the first layer is done, pour the lemon batter and pour evenly over the mixture. scatter the blueberries over the top of the batter, then cover with the rest of the oatmeal crumble. Cook for 25-30 minutes or until golden brown.

Serving Size: makes 16 4x4 pieces in an 8x8 pan.
