Mashed Vegetables

Submitted by: ROSEY4EXCLAIM

Introduction

A yummy and colorful way to sneak in your veggies. Great fun to make with kids! Those not on a Paleo or similar diet may find it a little high in fat; simply use less butter and substitute light coconut milk or another kind of milk for the coconut milk. To reduce the carbs, leave out the russet potato. A yummy and colorful way to sneak in your veggies. Great fun to make with kids!
