Vegan Baked Falafel

Submitted by: ROXIELOU

Introduction

Great healthy Mediterranean treat!

The calories only factor in actual falafel balls, not any of the sauces, pita, veggies that they are traditionally served with.

Ingredients

    Ingredients:
    Garbanzo Beans, 2 cup
    Onions, raw, 1 small
    Garlic, 3 cloves
    Cilantro, raw, 1 tbsp
    Lemon juice, .5 tbsp
*Extra Virgin Olive Oil, .5 tbsp
    *Coriander .5 tbsp
    *Cumin .5 tbsp
*crushed red pepper flakes, 1 tsp
*Wheat flour, white, all-purpose, unenriched, .0625 cup (2 tablespoons)

Directions

Preheat oven to 375 degrees. Drain and rinse garbanzo beans. Put in a medium sized bowl and smash with a fork. Add the rest of the ingredients and mix well. Form into small balls, about 1 1/2" in diameter and slightly flatten. Place onto an oiled baking pan.

Bake for 15 minutes on each side, until nicely browned (since it's baked, only the part actually touching the pan will be browned and crispy).

Serve with mini pita pockets, hummus, tazhiki sauce, tomatoes, lettuce and/or cucumber.

Serving Size: Makes 21 balls (3 balls a serving)
