I can't believe I haven't made this for the past 20 years. How silly am I? This is amazing!! I can't believe I haven't made this for the past 20 years. How silly am I? This is amazing!!Number of Servings: 4
Ingredients
-
2 cups flour
2 tbsp baking powder
2 tbsp brown sugar
2 soft bananas (optional - see tips)
2 pinches kosher or other salt
Tips
If you don't like (or have) bananas, you can add any other fruit as long as they are mashed or chopped very small. Wild blueberries (the small ones) can be put in whole. You can also omit the sugar and add herbs and cheese. This is a great basic recipe to get creative with!
Directions
mix 2 cups flour in a large bowl with other dry ingredients. add mashed up over-ripe bananas and just enough water to make a dough. This is messy, it will stick like glue to your hands so make sure you have easy access to a sink with water afterward.
Divide dough into 4 sections. Roll into ball and then flatten to approximately a centemetre (1/3-1/2") thick round disc on baking surface.
I use a pizza stone for baking but you can use anything handy, non-stick and oven safe.
Bake in the oven (top shelf to avoid burning) at 400 degrees F for 20-30 min flipping once half way through when dough turns golden. Can be also baked around sticks over an open camp fire or pan fried.
Serving Size: 4 individual bannocks
