Ingredients

Olive Oil, 1 tbsp
Butter, salted, 1 tsp
Red Onions, sliced, 3
White Onions, sliced, 3
Balsamic Vinegar, 1tsp
Couscous, 150 grams
Vegetable stock, 150 ml
Pine Nuts, 20 g
Hazelnuts,chopped, 40 grams
Walnuts, chopped, 30 grams
Rocket, 40 grams
Tips
Directions
-In a large frying pan, heat the oil and butter then add ALL the onion slices.
-Cook on a medium heat until soft, stirring regularly.
-Add the vinegar and continue to carmalise for at least 30 mins
-Meanwhile, place couscous in bowl and add vegetable stock. Cover tightly with clingfilm and leave for 10mins.
-Toss all the nuts into a DRY pan, and then add to couscous with rocket.
-Combine with onions and serve either hot or cold.
