1 cup Old Fashioned oatmeal
1 cup Almond Milk or Nonfat Milk
1 cup Whole Wheat Flour
1/2 cup Brown Sugar
3/4 cup Unsweetened applesauce
2 tbsp peanut butter
2 egg whites
1 tsp baking powder
2 scoops of vanilla whey protein
1/2 tsp baking soda
1/2 tsp salt
1/2 cup chopped walnuts
1/2 cup raisins
1 tsp cinnamon
1 tsp sugar - combine these two ingredients in separate bowl and sprinkle on top of muffins prior to cooking
When you put into muffin tins it may seem soupy but it cooks quick so check after 12-15 minutes.
Mix all the wet ingredients together. In a separate bowl combine all the dry ingredients, then incorporate into the wet ingredients.
Cook for 15-18 minutes.
