Introduction

Number of Servings: 16

Ingredients

    1/2 C. Oatneal
    1.5 C. Flour
    1 T. cinnamon
    2 t. baking soda
    1/2 t. baking powder
    1 t. salt
    1 c. chopped walnuts
    3 eggs
    1.5 C. sugar
    1 c. canola oil
    2 t. vanilla
    2 C. shedded zucchini

Tips

Let rest for 10 minutes in pans, then remove gently.


Directions

Beat eggs, sugar, oil, vanilla together. stir in zucchini. Mix the rest of the ingredients together and fold into first mixture--do NOT beat!
Bake at 350 degrees in a pre-heated oven in oiled pans.
