Introduction

Number of Servings: 16

Ingredients

    2 (9 inch) pie crusts
    8 slices bacon, fried and drained
    1 cup shredded cheese, cheddar
    1/3 cup minced onion
    1 (15 oz. container) egg beaters -I used Southwestern in the original, but you can use any kind you want
    1 1/2 cups of evaporated milk or fat free half and half
    3/4 tsp. salt
    1/4 tsp. sugar
    1/8 tsp. cayenne pepper (this is essential, it gives it that extra kick of flavor)


Tips

This tastes the best if it has been allowed to stand for about 15 minutes before serving. Fresh fruit on the side and you have a wonderful breakfast or brunch without the calories from the original recipe!


Directions

Heat oven to 425 degrees. Prepare your pie shells. Sprinkle bacon, cheese and onion in the pie shell. Beat eggs slightly; beat in remaining ingredients. Pour mixture on top of bacon, cheese and onion. Bake 15 minutes.
Lower oven to 300 degrees. Bake 30 minutes or until knife inserted 1 inch from edge comes out clean. Let stand at least 10 minutes before serving.
