Greek Chicken

Ingredients

    Olive Oil, 6 tbsp
    Butter, unsalted, 1 tbsp
    *Fresh Oregano, 8 tbsp
    Lemon juice, 5 tbsp
    Salt, 2 tsp
    Pepper, black, 2 tbsp
    Chicken Breast, no skin, 1 unit (yield from 1 lb ready-to-cook
    Garlic, 2 cloves

Tips

Make sure the garlic pieces are big enough to withstand a long time in the pan without burning. You may need to increase the heat when you begin to cook the chicken, which will cause the oregano to become very crispy.


Directions

Thaw chicken in microwave, if needed. Cut into strips, and put on a plate. Chop fresh oregano, and put into a bowl. Chop the garlic. Heat the olive oil in the skillet, and add the butter for flavor. Turn off the skillet while the butter melts in, so that it doesn't burn. Reheat the skillet on low, and add the oregano. Pour the lemon juice on top of the pile of oregano before you stir it around. Add the garlic. Stir it around. Let it simmer for a bit, and then begin to add the chicken. Fry the chicken in the herb and butter mix, and lay on a paper plate to absorb the oils.
