Had some extra veggies on hand, so I fixed up for breakfast. Spices could be mixed up here; italian, greek, sage/paprika could be used in place of the tumeric. Ingredients

2 large eggs
1/2 cup old fashioned rolled oats
1 cup broccoli stems, chopped
1 cup yellow squash, shredded
1/2 cup onion
1/4 cup green pepper
salt and pepper to taste
1 Tablespoon ground tumeric
Tips
Directions
Scramble eggs in a bowl and add oats. Let sit while you prep/chop/shred the other ingredients, to soften the oats. Mix everything together. Heat non-stick pan. Drop by scoopful onto hot pan. Cook about 3-4 minutes each side.
