Michelle Obama's Mac and Cheese, Veganized



Introduction

After hearing a radio story about presidential meals and first lady specialties, I was intrigued by the idea of Michelle Obama using cauliflower to make a healthier mac'n'cheese and figured a veganized approach was in order. At 11.2 grams of fat per serving, this is not what I would consider crazy healthy but it is yummy and it is healthier then your average mac'n'cheese. At 11.2 grams of fat per serving, this is not what I would consider crazy healthy but it is yummy and it is healthier then your average mac'n'cheese.
Number of Servings: 5

Ingredients

    8 oz (3 C dry) Whole Wheat Pasta (I used screw shaped)
    1/2 C Unsweetened Soymilk
    2 cups (1 pkg) Daiya Cheddar Shreds (Any flavor will work)
    1/2 small head Cauliflower, raw
    2 Tbs Parmesan Cheese, Galaxy Vegan
    3 tbsp Parsley
    Sal and Pepper to taste

Directions

1. Bring salted water to a boil and cook the pasta until al dente. Drain pasta and return to pan.
2. Steam the cauliflower until soft. You can put it in a microwave safe dish with a couple tbs of water, cover, and nuke on high for 10-15 minutes. Transfer to a blender along a couple tablespoons of the steaming liquid. Puree the cauliflower.
3. Add hot cauliflower puree, milk, Daiya, parsley, to pasta and season with salt and pepper to taste. You may need to put the pan back on heat to get the Daiya to melt and blend thoroughly.
