Introduction

Original Cream Puff that a diabetic can eat and not feel like they are really cheating. Original Cream Puff that a diabetic can eat and not feel like they are really cheating.
Number of Servings: 12

Ingredients

    1 C boiling water
    ½ C butter/margarine
    1 C all-purpose flour
    4 eggs


    Filling:
    8 oz of Cool whip lite
    1 pkg of instant vanilla pudding

Directions

Preheat oven to 400F
Combine water, butter, and salt in medium sauce pan. Stir to melt butter. Bring to a boil
Add flour all at once. Stir vigorously until it forms a ball and pulls away from the sides of the pan.
Remove from heat.
Add eggs all at one time , beating thoroughly.
Drop by spoonfuls onto a greased baking sheet, leaving room for expansion
Bake for 35 to 40 mins. Should look dry with no beads of moisture showing
Cool on rack. When cool, cut top almost off, pull out filaments and fill pudding and whipped cream mixture.

Mix the instant pudding with 1 cup of 1 % milk

Makes 12 large puffs or 24 small puffs.

Variations: Drizzle with caramel, chocolate, or butterscotch sauce
Could also fill with tuna, ham or egg salad
