Black Beans, Corn, Tomatoes, and Rice

Introduction

Just a little meal I came up with one day. Just a little meal I came up with one day.
Number of Servings: 4

Ingredients

    One 15 oz can Black Beans
    One 15.25 oz can Whole Kernel Corn
    One 14.5 oz can Diced Tomatoes
    One Boil in Bag Brown Rice
    1/4 c chunky salsa
    Sprinkle of Red Pepper Flakes to taste.

Tips

Garnishing with 1/4 cup cheddar cheese and some sour cream makes this really good.


Directions

Cook rice according to directions. Drain corn and add to a large sauce pan. Drain and rinse black beans, add to saucepan. Add tomatoes, salsa, and red pepper flakes. Heat thoroughly, reduce heat to a low simmer while rice finishes cooking. When rice is done, drain and rinse. Add to bean, corn and tomatoes. Mix well and serve.

Serving Size: Makes four - 1 cup servings
