Whole Grain Rolls Carren's Recipe

Ingredients

    1/3 cup Flaxseed (whole)
    1/3 cup millet or quinoa
    1 pkg yeast (2 1/2 tsp)
    1 1/2 cup warm water
    2/3 cup sugar (or 1/2 cup agave nectar)
    1 cup mashed potatoes
    2/3 cup smart balance butter
    2 eggs
    1 1/2 tsp salt
    1/3 cup gluten
    1/2 cup flaxseed (ground)
    6 cups whole wheat flour

Directions

Put flaxseed and millet in saucepan in saucepan. COver with water and heat to boiling, then remove from heat and cool slightly. Mix together yeast, warm water and sugar. Let rise 5-10 minutes. Mix all ingredients. Knead until smooth and elastic. Place in covered and greased bowl. Refrigerate 8 hours to 5 days. Remove from refrigerator, roll into balls, let rise 60-90 minutes. Cook at 350 for 20 miuntes.
