YUMMY Left-Over Brisket Breakfast Taco Filling

Introduction

Eat this wrapped in Flour or Corn tortillas (depending on your preference). I like to add a bit of re-fried beans to mine, and a few slices of avocado! GREAT way to use leftovers!! So YUMMY! Ingredients

    Beef brisket, 3 oz. (chopped or shredded)- Remove any excess fat
    Egg, fresh, 6 large
    Onions, raw, .25 cup, chopped (chopped or diced)
    *Diced Tomatoes Rotel green chilies 0.25 cup
    Hill Country Fare Shredded Mild Cheddar Cheese, 0.5 cup
    *Potato, raw, 1 small (diced) w/skin
    Milk, 2%, 0.125 cup
    2 Tbsp. Oil

Directions

Put 2 Tbsp. Oil in the skillet and heat on medium. Chop/dice the potato and add to oil (salt & pepper to taste). Chop/dice onion & add to potato. Chop/Shred leftover beef brisket, removing any excess fat & add to potato & eggs. Heat these ingredients over medium-low heat for appx. 5 minutes. Crack 6 large eggs into bowl, add milk & rotel & mix - scrambling. Add egg mixture to meat & potato mix and scramble to your preference. Add cheese when eggs are almost done.
Serving Size: Makes appx. 12 Breakfast Tacos - Serving Size .25 cup per taco.
