Ingredients

3 Egg White
1 oz 95% fat free diced ham
Handful of Spinach
1 - 2 tomatoes chopped
1/4 cup scallions or to taste
salt & pepper to taste
basil, fresh or dried to taste
1 oz reduced fat shredded cheese
Tips
Directions
Heat Oil in a non stick skillet
mix 1/2 basil, salt & pepper with egg whites, pour into skillet
add ham & scallions to the eggs
once eggs are cooked scramble and add spinach.
When spinach starts to wilt add tomatoes.
Add remainder of salt, pepper & basil and stir.
Add cheese on top.
