Spicy Turkey Chili

Introduction

This is an easy, healthy and tasty turkey chili that will allow you to not miss the beef in the chili. If you like spicy this is the Chili for you. Plus it includes a legume and 2 servings of fruits and vegetables. With a serving of brown rice it makes a healthy full and filling meal. Ingredients

    2 tsp olive oil
    4 garlic cloves, minced
    1 medium onion, diced
    1 lb ground turkey, 93% lean
    1 can (15 oz.) black beans, drained
    1 can (15.25 oz.) whole cut corn, drained
    1 cab (15 oz.) red kidney beans, drained
    1 can (28 oz.) crushed tomatoes, not drained
    2 tbsp tomato paste
    2 tsp ground cumin
    2 tsp ground cinnamon
    -1 tsp ground red pepper
    -1 tsp chili powder
    cup chopped cilantro
    tsp ground black pepper
    1 dash of salt
    1 jalapeno pepper, minced
    1 habanero pepper, minced (optional)
    .5 paplano pepper, minced
    .25 cup ground flax seed (optional adds carbs and omega-3, adds 30 calories)
    1 tbsp apple cider vinegar


Tips

Serve with brown rice.
Without rice add diced onion, low-fat sour cream and/or low fat grated cheese.
Works real well as the chili in chili dogs.


Directions

Heat the oil in a large pot over a high heat.

Add the onion and garlic. Cook, stirring frequently, for 1 to 2 minutes or until softened.

Add peppers and drained corn until the peppers are slightly sweating and corn is slightly brown. Add 1 dash of salt to stop sweating and 1 tbsp apple cider vinegar to deglaze.

Turn heat down to medium high. Add drained black and kidney beans and continue heating for 2-3 more minutes.

Add ground turkey to pot and brown being careful not to separate the turkey into small bits. Just before turkey is fully browned add Add the cumin, cinnamon, red pepper, chili powder and black pepper and stir until spices coat turkey. Continue heating for 2 minutes or until turkey is browned.

Optionally add flax seed and stir.

Add tomatoes and bring to a simmer. Add Tomato paste and stir to incorporate.

Return the chili to a simmer, then remove from the heat.

Garnish with cilantro.
