Introduction

When you don't have time to stand by the eggs to scramble & flip...throw them in a muffin tin! The result is a healthy portion-controlled "on-the-go" breakfast! Number of Servings: 9

Ingredients

    6 eggs
    1/4 c. shredded cheddar cheese
    1/4 c. sliced mushrooms (canned)
    Dash- salt & pepper

Directions

Beat 6 eggs, mix in cheese and mushrooms. Sprinkle with salt and pepper and mix well. Pour into muffin tins, sprayed well with canola oil spray. Bake at 400 degrees for 15 minutes.

Serving Size: Makes 9 muffin cups
