2 med onions chopped
1 TBSP olive oil
4 cloves garlic, minced
2 tsp ground cumin
1/4 tsp cayenne pepper
2 cans chicken broth
4 cups cooked chicken, cubed
3 cans great northern beans, rinsed and drained
optionial: 2 cups shredded montery jack cheese
sliced jalapeno peppers
In a 3 qt suacepan, saute onion in oil until tender. Stir in garlic, cumin and cayenne pepper. Cook 2-3 minutes longer. Add broth, chicken and beans. Simmer, uncovered, for 15 minutes until hot. Remove from heat. Yummy options are to add cheese, sour cream and or jalapeno peppers.
