Black Bean and Chicken Enchiladas

Introduction

May substitute cheese for low fat or mexican cheese with seasonings.

3 Tbsp ground cumin
1 Tbsp chili powder
1 Tbsp red pepper flakes

Ingredients

    2 chicken breasts, diced & cooked
    1 can black beans (15 oz) drained and rinsed
    8 flour tortillas (6 inch)
    2 cups cheddar cheese (reserve 1/2 cup)
    1/2 cup diced onion
    3 cloves garlic, minced
    2/3 cup water
    15 oz. canned tomato sauce
    5 tsp of Meg's taco seasoning mix
    1/4 tsp. salt
    1/4 tsp, black pepper


Directions

Preheat oven to 350 degrees. Grease 9x13 inch pan. In a small skillet, cook chicken breasts. Remove chicken from pan and dice. Remove some of grease from pan and saute onion and garlic. Add chicken back to skillet. In a separate small bowl, mix tomato sauce, seasonings, salt, black pepper, and water. Pour a thin layer of blended sauce into 9x13 inch pan. Place a thin layer of tomato sauce blend on each tortilla. Place equal amt of chicken mixture, black beans, and cheese into each tortilla. Sprinkle with reserved 1/2 cup cheese and remaining tomato sauce. Bake uncovered for 20 min.
