Pancakes - Almost Paleo

Introduction

These egg and almond butter based 'pancakes' are tasty and very low carb compared to traditional pancakes. These egg and almond butter based 'pancakes' are tasty and very low carb compared to traditional pancakes.
Number of Servings: 12

Ingredients

    1 large egg
    2 large egg whites
    1/4 cup mashed banana (about 2 ounces)
    3 oz. almond butter (I use one with added flax for more Omega-3s)
    2 T Oat Bran (optional - I used it to thicken the batter slightly)
    1/2 tsp cinnamon
    1/4 to 1/2 tsp vanilla
    dash salt (optional)
    butter for cooking (I used one pat for the whole batch of 12 small 'cakes')

Tips

These will not show much cooking up the sides like traditional pancakes to indicate when to turn so please watch closely.


Directions

Combine all ingredients except butter. Heat a non-stick griddle or large pan to medium heat and melt butter. Drop by rounded tablespoons onto griddle. Turn when first side is lightly browned. Finish browning other side until 'set'. The 'cake' will feel firm yet springy to the touch. This takes only a few minutes on each side at medium heat. Watch them closely so they don't burn. Serve with or without a small amount of pure maple syrup.

Serving Size: makes about 12 small 'cakes'
