1 cup cubed fress eggplant
I cup raw mushroom pieces
1 tomato diced
1 cup diced raw celery
50 grams low fat cottage cheese (flavour of your choice)
Olive oil for frying the eggplant
Non-fat vinaigrette for tossing final salad
Mix these with the rest of the diced ingredients.
Toss with the vinaigrette.
