Fish Tacos with Avocado Salsa

Introduction

Just a little something I threw together. I like to add little queso blanco on top. The calories are not included. Just a little something I threw together. I like to add little queso blanco on top. The calories are not included.
Number of Servings: 4

Ingredients

    Taco:
    4 tilapia filets
    1 tsp olive oil
    8 corn tortillas
    Chef Paul Prudhomme's Blackened Redfish Magic

    Salsa:
    1 cup chopped plum tomato
    2 T finely chopped onion
    2 tsp fresh lime juice
    1/4 tsp salt
    1/8 tsp ground black pepper
    1 avocado, peeled and chopped

Directions

For tacos:
Sprinkle both sides of tilapia with seasoning. In a nonstick pan over medium high heat, add oil and then tilapia. Once that side is cooked, flip and season, cooking until golden. For tortillas, heat small pan over medium heat and then spray with cooking spray. Add tortilla, cooking and heating both sides. Fill tortilla with portion of fish. Top with sour cream and Avocado salsa.

For salsa:
combine Tomato and next 4 ingredients. Add avocado, stir gently to combine.

Serving Size: 4 (2 tacos each)
